  The Vacqueyras appellation was sanctioned in 1990, but it still needs champions. Step forward Henri Bungener of Clos de Caveau. He chose his estate amid woodland below the Dentelles de Montmirail because it was isolated and thus perfect for organic cultivation. 40-year-old vines and severe sorting keep yields very low indeed. "Bouquet garnis on the nose with rich fruit and black pepper. Silky, peppery palate with good depth of fruit." Wine & Spirit, May 2008
