Bernard Fouquet is one of the top growers in Vouvray (home to opulent Chenin Blanc) and organically-inclined. Vineyard inputs are applied with pinpoint accuracy, and grasses are grown between vine rows to encourage natural predators. From 'Le Marigny', one of Bernard's vine-clad lawns, planted on limestone, this is a relatively dry, barrel-fermented style, generous, yet crisp, with flavours of ripe apples and herbs. One for poached river fish.
