  Subjects of the Austro-Hungarian empire, the Endrici family arrived in northern Italy in 1885 and established a formidable estate at the foot of the Dolomites. Enthusiastically biodynamic, they offer an impressive array of wines including this unique style from the region's Teroldego grape. Fabulously rich, intense bramble-fruit and black cherry flavours were achieved by adding wine made from grapes dried to raisiny succulence. Hack off some chunks of Parmesan for this.
