  Revealing the limitations of France's appellation system (which dictates, among other things, the varieties a grower may use), this fabulous white mocks its humble 'Vin de Pays' designation. Maker Gérard Gauby is a diehard 'biodynamist' who cossets his rugged Pyrénéean vineyards. Insect and fungi are deterred with home-brewed plant-based potions, manure from horses working the estate serves as fertiliser and pruning is severe. The chalky soils of premier plot 'Le Soula' - 'The Sunny Side' - impart intense minerality. Save this spicy, sumptuous, pineapple and cashew-scented white (principally oaked Grenache Blanc and Sauvignon) for the company of expensive fish dishes and serious wine enthusiasts.
