Based in Graach, near the centre of the middle-Mosel Bernkastel, Willi and Christoph Schaefer tun this diminutive estate of 3.5 hectares (8.5 acres), with vines in Wehlener Sonnenuhr and Graacher Domprobst and Himmelreich. Willi uses natural yeasts, and the wine is fermented in the traditional 1000 litre oak barrels. Lime blossom and apricots, with an off-dry finish.
