Sparkling and Cava
Aromas of almond meal, roasted cashews and shiitake broth greet the nose complemented by pastry crust, lemon blossom and frangipani floral notes. The entry is fine and enticing, with nashi pear and flinty Chardonnay characters carrying through to the creamy, lemon meringue middle palate. Freshly baked biscuit and cashew nut flavours evolved from two and a half years yeast ageing resonate throughout while Pinot Noir provides drive, focus and extension to the backpalate along with a fresh, crisp and persistent finish.
