    Rose Wine
    A wine with fruity fine flavours, with lovely aromas of wild strawberry with hints of black pepper. On the palate it has a savoury and minerally character and fine, supple tannins with a lively, fresh finish. Sheltered by the Alps, Lessona did not undergo eolic erosion, so its sandy, acidic soil, with a pH of 4.5 - 5.5, is very well drained. In these conditions, the vines put down deep roots in search of the mineral nutrients they require. The climate is dry with wonderful light, and cool night breezes blowing from the Alps to the north mitigate the hot summer days. This in turn ensures a long growing season. The density of planting is 5.000 vines per hectare. The grapes were harvested by hand in little crates, Vespolina at the end of September and Nebbiolo in the middle of October. After 4/6 hours of skin contact, the must was separated from the skins. A slow fermentation at 16°C controlled temperature followed. The wine was kept in stainless steel tanks and was then left to decant at low temperatures in order to reach natural stability. No malolactic fermentation was allowed to take place in order to keep the wine fresh. Grape varieties 70% Nebbiolo, 30% Vespolina.
